Avocado, Egg & Microgreen Picnic Sandwich

Avocado, sliced egg and fresh microgreens on seeded bread

Fresh, simple and easy to pack for a summer lunch by the sea.

Creamy avocado, sliced egg and fresh microgreens make this a colourful sandwich without complicated preparation.

Microgreens are tiny young vegetable and herb plants harvested shortly after they sprout. They add colour, freshness and delicate flavour to everyday meals.

Preparation time: 15 minutes

Makes: 2 sandwiches

Suitable for: Vegetarians

INGREDIENTS

• 4 slices of seeded wholegrain or sourdough bread

• 2 large eggs

• 1 ripe avocado

• 2 small handfuls of microgreens

• 1 teaspoon lemon juice

• Salt and black pepper

• A little mayonnaise or plain yoghurt, optional

HOW TO MAKE IT

1. Place the eggs in a saucepan of cold water. Bring to the boil, then simmer for 8–9 minutes.

2. Transfer the eggs to cold water. Once cool, remove the shells and cut the eggs into slices.

3. Scoop the avocado into a bowl. Add the lemon juice, season lightly and mash with a fork.

4. Lightly toast the bread, then allow it to cool completely.

5. Spread the avocado over two slices of bread. Add the sliced egg and microgreens.

6. Spread a little mayonnaise or yoghurt on the remaining bread, if using. Close the sandwiches and cut them in half.

7. Wrap each sandwich firmly and carry it flat in a cool bag with an ice pack.

EASY VARIATIONS

Add a few young red spinach leaves for extra colour. WeGrow Farms’ red spinach is red amaranth, also known as lal shak.

You could also add sliced cucumber, crumbled feta or a small pinch of chilli flakes. For a vegan version, leave out the egg and add extra avocado and cucumber.

A SIMPLE IDEA FOR CAFÉS AND RESTAURANTS

Serve the sandwich open-faced on toasted sourdough to display the different colours and textures. Micro basil can add a familiar basil aroma, while micro red amaranth provides fine crimson colour.
